Making chili by scratch can be a difficult task. Jalapenos help adjust the spiciness of the chili or you can skip them all together. Add more meat if you want it meatier. Less stewed tomatoes make the chili thicker. You can skip whatever vegetables in the ingredients you choose. Use this recipe to start with and make the chili your own.
Ingredients
- 1 pound of ground beef or ground chuck
- 2 cans of kidney beans
- 3 small cans of mexican stewed tomatoes
- 1 packet of chili seasoning
- 1 onion
- 1 can of corn
- 1 small can of chopped black olives
- 1 can of sliced mushrooms
- 2 Jalapeno peppers
Preparation
Put beef in skillet to brown. Keep an eye on the hamburger so it does not burn. When it is browned, strain the excess grease and set the hamburger meat aside. Pour cans of stewed tomatoes in a blender and blend until the sauce is a little thinner than tomato sauce. Pour the tomato sauce in the slow cooker or a large pot. Add the hamburger meat to the tomato sauce and stir.
Remove the skin of the onion and rinse the onion off. Finely chop up the onion. Add the onion to the tomato sauce and meat mixture, stir in. Open cans of black olives, mushrooms, and corn and strain each can individually. Add cans to meat and tomato sauce, stir.
Rinse and chop one jalapeno pepper at a time. Add to mixture and taste for spiciness. You can add as many or few as you need. Empty cans of kidney beans in to a strainer and rinse with water for a few seconds to remove excess juices kidney beans are soaked in. Don't rinse too much where skin starts to peel off. Add to the rest of the chili and stir in. Beginning with a half a packet of chili seasoning, add to chili. Taste to check if seasonings are overpowering, add more if needed.
Simmer in a pot on the stove, stirring frequently, for at least and hour and a half or until kidney beans are tender. If you are using a slow cooker, you can leave the chili on low all day if you like, again stir frequently.
Unless you are feeding about 8-10 people, you will probably have leftovers. With your leftover chili, you can add Velveeta cheese and make a tortilla chip dip. You can also use leftovers for chili dogs.
